I super love Mexican food. Like a lot. I think maybe you know this by now?! But sometimes, you just need to switch it up, ya know? A couple of weeks ago I still felt like eating tacos, but in some weird parallel universe moment, I didn’t want one with guacamole. (I was slightly concerned that the world was ending.) After going to the farmer’s market multiple times and seeing mounds of amazing squashes, I knew I had my answer. I picked out a nice Delicata, some onions and headed home.
The result was pretty outstanding. I ate the leftovers every day at work, and it just made lunch time happier. And I want to make your meals happier too!
