Since Joe and I love skiing so much, we take most of our vacations to come up to Vermont and ski. Aside from the skiing, there is so much I love about coming up here – an amazing group of friends, being surrounded by nature, and so, so much eating. Which in other winters is fine – we are skiing enough where I can eat what I want and not gain
any much weight. But this winter, with my wedding quickly approaching, I want to slim down a bit. Which means less pigging out, healthier meals and if I’m hungry enough to snack – healthy snacks only!
The Pistachio Health Institute was kind enough to send me some pistachios to try as a healthy snacking alternative – which I was super excited about! First off, they are Joe’s favorite nut ( I honestly had to hide them for a bit because I was worried he would eat them all before I could try them), and second they make the perfect snack for me here in Vt. They are the yummiest nut (in my opinion!) and one of the lowest calorie, lowest fat nuts and offer more nuts per serving compared to most other snack nuts, and among the highest in protein. 30 nuts are only 100 calories!
So I decided to create a bunch of healthy, simple snacks that I can make in minutes that will leave me feeling full – without blowing the calorie bank! First up is this delicious Pistachio parfait with yogurt and pomegranates. The pistachios add the perfect crunch and flavor, while the pomegranates give it a burst of sweetness – and if you love sweet and salty (this is quickly becoming one of my favorite combinations, you will love this!
