Welcome to my morning, and it is awesome!I’ve actually been doing a fairly good job of eating cleaner the last week (with a few slip ups here and there) – but the highlight of it all has been these overnight oats. So friggin’ creamy!
It all started because I was eating fairly unhealthy breakfasts (ahem, leftover pie) and I felt like, if I planned my breakfast ahead, something healthy, and actually made it, it would start my day off right. And if I did that, I’d have a better shot of eating well the rest of the day. Guess what. It worked.
When I started my day with something health and filling the rest of my day went swimmingly – it led to smarter lunch choices, and then dinner and having a grapefruit for dessert. So I started to play around with different variations on my oats.
You see – I’ve never really loved the consistency of them. Yes, they are soft – but overnight oats aren’t creamy like oatmeal. Until now!
