If you’ve been reading this blog for a bit, you know I have a deep, long lasting love for Mexican food. So it really shouldn’t come as a shock to you that I love tacos. Unfortunately, I rarely order them out because they come with tons of rice, cheese, sour cream, fatty meats and lots of other things that I try to eat in moderation. “Healthy” taco night is always a favorite at home, but since Joe is trying to get in shape, and I’m on a short hiatus from running, we are really making an extra effort to eat super healthy at home.
That’s when I came up with these taco boats! I was reading a recipe for lettuce taco wraps that looked okay, but just not very filling, when I got the idea for these little guys. I was done, start to finish, in 30 minutes and they are SO GOOD! Not to mention totally filling. 2 of these and I was set for dinner without feeling hungry after.
