Confession time. First up, I love this sandwich. It’s deliciously rich, and I came up with in Vermont using some (defrosted) frozen blueberries. It’s got this delicious sweet side with the blueberries and cheese – but the basil, balsamic vinegar and caramelized onions keep it from being too tart. Ugh, so good! But – right now while I’m trying to lose weight? I’m honestly not eating it all the time. It’s totally an indulgence, but a scrumptious one!
Second confession: I shared this recipe over on MyFitnessPal as part of one of my contributing “Veg Out” blog posts. The post is called “Why I Became a Part Time Vegan”. Although I love vegan cooking, and eat that way 70% of the time, I am a flexitarian. I have never really shared that on here.
