Story of my life: it’s winter, I don’t have the time or motivation to exercise beyond skiing, and my “diet” has fallen to the side. The only thing keeping me from getting plump again is making as many healthy choices in the day as I can (and PS, that usually does not include dinner and the chocolate I have after it.) What it does include? Trying to have a really healthy breakfast and a sensible lunch (I know, I sound like a weirdo commercial.)
Most days I reach for a green smoothie, or even a chocolate one (filled with kale tho). But some mornings I know are going to be so busy, or I have to get up so early, I just don’t have the time or energy to make one, I turn to overnight oats. Have you ever tried them? They are so easy, and healthy. Just a 1:1 ratio of milk to oats, some mix-ins and leave it covered in the fridge overnight. Voila: breakfast! My latest overnight oat obsession? Vanilla Bean and figs. OMG. Seriously – no matter what the recipe – if you see figs in your supermarket just buy them! We can talk recipes later. But these oats are so creamy and filling a fig-a-licious, you just can’t say no.
While I would legit love this breakfast (or any meal) to straight up taste like a dessert, I also need some protein to keep me full all morning – so the touch of slivered almonds brings that to the table plus some yummy crunchiness. And while figs are naturally sweet – the oats and vanilla aren’t. So you can make this as sweet or natural as you want by adding more or less honey (or Agave.)Coming up I have some recipes that I have been slowly working on!
