A few weeks ago I had a girls night at my place. Aside from the fact that my two guests are two of my closest friends, one is also a vegetarian and the other a healthy eater, I wanted to make us something healthy to eat. While sitting at my desk that Friday it hit me: Beer. Chili. Butternut Squash. Yes – exactly in that order. And suddenly I had a vision – of using crumbled cauliflower florets as substitute for ground meat.
The next morning I popped up and went to the farmer’s market. (No, really – I turn to Joe on Saturday mornings and exclaim, “It’s Farmer’s Market Day!” Every. Single. Saturday.) I got some gorgeous purple cauliflower, a big butternut squash and then came home and stole one of Joe’s dark beers and got cooking.
Everything about it is healthy and delicious and between the 3 of us we pretty much finished off the entire pot. (Almost 6 servings. Oops. And then we went for fro-yo. Double oops. Oh and I served my Focaccia with Figs and Caramelized Onions as an appetizer! )
But this chili is so rich and delicious and easy so you just have to make it!
IThis falls into the category of big dinners I like to make on Sunday nights and then have the left overs during the week for a fast dinner or a cheap lunch – a lot like I did with my Pumpkin Lentil Curry. Joe hates cauliflower, but I feel like the rich flavor of the beer, chili and cocoa powders and squash will mask whatever it is that he dislikes about it. (Because I totally don’t get it). Plus, like soups, stews and curries – the flavor of this chili only gets better as each day passes.
Now, we ate this chili as is – but it would also be delicious with some shredded cheese on top or sour cream if you aren’t dairy free. Want to get wild? Mix in some tortilla chips, or just use them to eat it like a dip.
Last weekend I did a fair amount of cooking for our football party – but one of my recipes (that I’m super excited about) was a little bit of a flop. I’m going to give another try and try to get it jusssst right before I share it – but it’s so going to be worth it! We also had our engagement dinner where our parents met for the first time (it all went well!) and I got a little dolled up for it. I’m loving this manicure thing – I may have to treat myself to it more often!
