Ok first, let’ try to ignore the fact that I clearly have a pumpkin obsession and it might be a problem. But, once we can get over that we can talk about how this pudding should be included in the wonders of the world. Last year I made this awesome pumpkin pie parfait for Thanksgiving, and much like this pudding it was quick and delicious. So why do I think this one is better? We for starters this one only has 4 ingredients, it’s ready in half the time, and most importantly – it’s way, way healthier.
The only thing in here? Pumpkin puree, a ripe avocado, agave nectar and pumpkin pie spice. Boom. Done. Topping with the coconut whip? Optional deliciousness. Don’t get me wrong, it’s awesome with it, but the nights I didn’t add it, I didn’t miss it at all. This pudding is so rich and creamy without tons of prep – or calories- that’s definitely fitting into my health and wedding prep plans.
So get out your pumpkins and blenders – we have pudding to eat!Don’t you think it’s really hard to find healthy, natural, low calorie desserts? Is that just me? Because it’s definitely something I struggle with. Some nights I just let myself have a piece of dark chocolate for dessert, just to kill my sweet tooth. But sometimes I want more. And my problem is, if I eat something that I feel like ruins my diet I think – well since this serving ruined my diet already, I just have three more. Welcome to my brain.
I’ve bee reading Isabel Foxen Duke’s blog to work on this, but one simple way that I fight is to make sure that the desserts I make (and have in the house) don’t make me feel that way in the first place. And taking out a glass of this pudding was such a delicious way to top off my dinners – without any guilt.
Oh and let’s be honest – I have all of these ingredients in my home at any given time. So any time I want this for dessert I can have it quickly – so there are no excuses for eating something unhealthy!
Sadly, this recipe is the end of my pumpkin streak (for a little while!) but not the end of squash – since I have this ridiculous Delicata Squash Taco coming your way this weekend. I’ve been eating it every day for lunch at work – and I think I need to eat every day next week too. So. So. Good.

- 1 can Pumpkin Puree
- 1 ripe Avocado
- 2 tablespoons Agave Nectar
- 2 teaspoons Pumpkin Pie Spice
- In a blender or food processor add all ingredients and mix until smooth. Chill and Serve!
