Do you ever have a week that kicks your butt? That was this week for me. This recipe appeared on another website, where I talked about a vegan cleanse that I did, and how that inspired me to create this smoothie. To put it nicely – people hated it. They hated the idea of a cleanse, that it was vegan, that I’m a flexitarian, and that I called this a detox smoothie. So I took a week to lick my wounds and then decided to post this anyway.
I really do drink this every morning – and have been drinking some variation of it for months now. And I can honestly say I feel much less sluggish in the mornings now, and especially after I run it provides additional hydration. And oh – most importantly – it’s delicious!
For a while I was just making fruit smoothies, until I realized I could blend in leafy greens for extra calcium and fiber – and I’d never even taste it! It makes the smoothie heartier and more filling with very little calories. And since I’ve been slowly trying to lose some weight – this is a big win for me. I know that it’s much harder for me to stick to a diet all day if I start the morning hungry.
I love the kick parsley gives it too – plus it’s excellent for urinary tract health. (gross? maybe. but true!) If you aren’t a fan of spinach you can try substituting kale as well, any any berries and fruit will give the smoothie a sweet flavor while masking the flavor of your leafy greens.
In my week away from the blog we’ve been eating a lot of gazpacho – its the perfect warm weather meal – plus it’s light and healthy too! You can expect to see that up on the blog very soon!

- 1/3 cup, Soy Milk
- 1/4 cup Raw Cashews
- 1 cup Raw Parsley
- 2.0 cups Raw Spinach
- 1/2 Peach
- 6 Strawberries
- 1 tbsp Flax Seed Meal
- 3-4 Ice Cubes
- Blend all ingredients until smooth. Drink cold.
