Is it hot where you are? It is here in NY. It’s just the first week of June and it’s already hitting 80 degrees, and the nights a warm and sticky. Believe me, after the winter we had, I have no complaints – but this summer we are clearly going to need a way to cool off.
My strategy? Plenty of time at the beach, frozen breakfast smoothies, and these popsicles! A little bourbon infused peach lemonade is perfect for a lazy weekend afternoon. Not a fan of booze or bourbon? Just skip it! But if you are, these boozy treats are sweet and delicious and will cool you off instantly!
Don’t you love these Tovolo Popsicle molds? I’d been jonesing for them for a while…. but recently I walked into The Brooklyn Kitchen - it’s right around the corner from me – saw them and had to have them. I’d written down so many popsicle recipes (including this one) that I just needed to buy them!
To beat the heat, this past weekend Joe and I went camping and rafting on the Delaware river -which is why this post didn’t go up Saturday as planned. I wasn’t counting on zero internet, wifi or cell service! I couldn’t even Instagram cute pictures of Oreo in the raft in his life jacket. PS: Oreo loves rafting – getting splashed, not so much!
I honestly wish I could have brought these popsicles on the trip with us. They would have been perfect in the afternoon, after a hike and lunch, while we relaxed and played card games. (They wouldn’t have survived the 3 hour drive up – boo!)
Plus, because there is bourbon in them, they don’t freeze hard as rock like most popsicles, but aren’t mushy either! I definitely plan experimenting with different flavor variations on this. What would you want to see?!

- 2 cups lemonade
- 1 cup peach puree
- 2 ounces Bourbon
- In a blender mix all ingredients until smooth, and pour them into popsicle molds. Let freeze overnight.
